EASY GARLIC MUSHROOM PASTA

It's such a great feeling when you make something that tastes even better than expected. This was easy and delicious and even my non-vegan husband loved it and ate 2 servings. I highly recommend adding extra mushrooms.

What I did differently and clarifications:

-My diced onion measured 1 cup

-Used 16 ounces of mushrooms which is double what the recipe called for

-Since I used more mushrooms I did not add plain water and used 1 cup total of reduced sodium vegetable broth

-Since my husband does not tolerate heat I only added 1/8 tsp red pepper flakes to the pot (but sprinkled more on my serving)

-Used whole wheat pasta and this is the first time my husband actually liked it

-When dry sautéing the onions you will need to add a splash of water to release the browning sugars that stick to the pot (see my pictures)
