DOUBLE CHOCOLATE PEPPERMINT COOKIES

Years ago I could easily eat an entire pack of Thin Mints Girl Scout cookies, never once considering what they were made of. Different times now... I am a wiser consumer and wiser doctor. These cookies are certainly delicious and healthier though I did miss the crispiness of Thin Mints.

What ingredients are in Thin Mints Girl Scout cookies that I prefer to avoid? Caramel color, artificial flavor, 2 1/2 tsp sugar per serving (4 cookies), and oil among others. See full info at the Girl Scouts webpage: Meet the Cookies

What I did differently and clarifications:

-My almond flour weighed 186 grams and cocoa powder 44 grams

-Used coconut sugar, 42 grams, instead of maple sugar

-My almond butter weighed 125 grams and maple syrup 90 grams

-Used 1 teaspoon peppermint extract and I highly recommend not using less than that

-Used only 1/2 cup 72% dark chocolate chips which was plenty

-Made 19 cookies, each before cooking weighed about 32 grams
