Za'atar is a Middle Eastern dried spice blend that is savory and amazing!! While recently in Dallas visiting my newborn grandson we went to a Farmers Market. I purchased a jar of freshly made Za'atar that was incredible. I made an easy and delicious snack using tofu which was devoured within minutes. You can find Za'atar at most major grocery stores, international grocery markets, or online. There are recipes online if you want to mix your own blend. I also use Za'atar to season roasted chickpeas which are one of my favorite savory snacks.

What I did differently and clarifications:

-I made this recipe because I had opened and pressed a pack of firm tofu the day before but didn't use it. My son has a tofu press and this was my first time using one. It worked so well and made the roasted tofu so crispy that I have now purchased a press for myself.

-Mixed all of the remaining ingredients in a bowl but lowered the salt to 1/4 tsp and only used 2 TBSP Za'atar. Then tossed in the cubes of tofu. Let the cubes absorb the seasoning for 20 minutes with the bowl on the counter (not in the fridge).

-Baked in my son's countertop Cuisinart Toaster/Oven/Broiler for about 15 minutes
