Oh My Gosh these are so delicious!! Even my non-vegan husband loved them. My husband and I had them as our evening meal but they would make a great game day snack. You will impress your family and friends with these!

I served the egg rolls with my family’s favorite homemade dipping sauce: Chinese Hot Mustard Sauce. If you prefer to not bother with the wrap you can eat the filling in a bowl, maybe over some rice.

Kitchen info:

-Scallions and green onions are the same thing. The only difference is how the store chooses to label them.

-Best to store sesame oil in a cool, dark place. I keep mine in the fridge.

-"Baby Bellas" is another name for cremini mushrooms. If "baby bellas" are grown longer, they become the large portabella mushrooms.

-I use organic reduced sodium tamari because it is my favored option when I want that full umami flavor. Read this blog article from “Forks Over Knives” to understand the differences between tamari, soy sauce and some substitutes.

What I did differently and clarifications:

-Did not have tofu so used 4 oz of dried soy curls, rehydrated using vegan chicken broth (made with 1 1/2 cups boiled water and dried seasoning), soaked 10 minutes, then squeezed out the excess liquid. Used kitchen scissors to cut them into small pieces.

-Used 3 TBSP reduced sodium tamari

-Package of slaw mix was 16 oz

-Used the white and green part of the green onion

-Did not add salt or pepper

-Cooked the mushrooms and cabbage until essentially no more water was released (see picture)

-After mushrooms and cabbage done, added green onion, soy curls, and peas at the same time. Cooked for several minutes. Turned off heat and then mixed in the garlic powder, tamari, and sesame oil.

-When assembling the egg rolls I used about 1/4 cup of filling per wrapper.

-Made 17 egg rolls (had enough filling for 18 but no room on my baking tray) and baked 400 degrees, center rack, for nearly 25 minutes, turning them over twice during that time.
